Greens and Beans





MMMM, Greens and Beans is a simple, Southern Italian/Sicilian peasant dish. You take cleaned and chopped escarole (a bitter green like chard almost), sautee it with lots of fresh garlic and oil, then add a little broth and white beans. You can also toss in some sliced Italian sausage...Serve with a crusty artisan bread, and buon appetito!
